The Thermodynamics of Liquid Mixtures: From Cell Biology to Italian Cuisine

The thermodynamics of liquid mixtures has fundamental applications in cell biology. In particular, it is thought that phase separation is the mechanism by which so-called “bimolecular condensates” form in the cytoplasm, associated with several important cellular functions. This theory has also revived the fascinating idea of Oparin and Haldane that phase separation could have occurred in the primordial soup, suggesting its relevance to the origin of life. In this seminar, I will present a simple model describing phase separation in mixtures where chemical reactions occur out of equilibrium. I will then apply some of these concepts to the phase behavior of Cacio e Pepe pasta. For this whimsical project, my colleagues and I recently received the IG Nobel Prize in Physics. I will conclude by sharing some anecdotes about the prize and the ceremony.

A forum for discussion among students, student representatives, and the director of the Physics Department to highlight the strengths and challenges of the Master’s Degree in Physics, including by listening to the needs and perspectives of students in the Bachelor’s program.

Based on this shared analysis, we will work together to develop new proposals and initiatives aimed at improving the Master’s degree program.
