
Roti with hagelslag and pizza with sillström: the multicultural food environment

Abstract
Almere (the Netherlands) is a newly built city: it recently celebrated its 50th birthday. Being so young, the city does not have much of a culinary heritage. That said, it is a very multicultural city, meaning it’s the different nationalities that make up the city’s cuisine. Starting from a Social Practice Theory perspective I discuss the role of ‘food from home’ for people with a migration background, both first and second generation. I show that through processes of fusion and ceremonialization the role of such foods in daily life changes – although their importance does not. I also shortly discuss the implications of this finding, countering it to how migrant eating is often problematized and seeing opportunities for the protein transition.
